In our wine cellar we care for our wines carefully and cultivate them as pure crus. The wines are bottled with their natural residual sweetness – typically bone-dry.
Thus, we retain digestible wines with distinct characters. We put a high priority on natural cultivation and the preservation of the typical taste of every single grape variety.
Or red wine grapes are fermented on the mash. The malolactic fermentation and the following storage in great wooden barrels impart harmony and full flavor.
Another passion is the manufacturing of sparkling wine. The creation of sparkling wine starts with the vintage: Only selected qualities can be used to manufacture an excellent sparkling wine. Our sparkling wines are produced by the means of a second fermentation. They ripen more than 9 months in the original bottle on the yeast before they are disgorged and corked. By means of the production in the classic procedure (Champagne-procedure) each bottle of sparkling wine gets its individual character. Each bottle is unique!
A small distillery has also been preserved. In the winter months the hand-picked fruits of our fruit-harvest are distilled. We still distil traditionally in a copper vat (Rosenhut) with wood. This kind of distillation is very elaborate and requires a lot of skill and experience. This knowledge has been passed from generation to generation within our family. With this experience we produce a very clean, fruity and mellow distillate – a noble-distillate.
